Cherry Pepper Smash Burgers

• 600 g ground beef, 20% fat, loosely rolled into balls
• 4 soft burger buns, split
• 8 slices of cheese
• 4 tbsp mayonnaise
• 2 tbsp Hand Craft Original
• 1 white onion, sliced paper thin
• Pickles
• Salt and black pepper

Method

Tick things off as you go

1. 01Stir the mayonnaise and the Original together. That is your burger sauce.
2. 02Get a heavy skillet or flat top as hot as it will go. Toast the cut sides of the buns and set aside.
3. 03Put two beef balls on the dry pan and smash them flat, hard, with a stiff spatula. Season.
4. 04After about 90 seconds the edges will be lacy and brown. Flip once, add cheese, and give it 45 seconds more.
5. 05Stack two patties per bun with onion and pickles.
6. 06Spread the sauce generously on the top bun and close.
